Weekend math: The better the weekend = faster it goes.
The “time flies when you’re having fun” author was on to something, eh?
These days — these weekends — I’ve been taking full advantage of sleeping in. Since I can’t run, I don’t need to get up early and beat the heat. So, on Saturday morning I headed out for a late morning bike ride. After an afternoon coffee and an even later breakfast/brunch, I headed to the mall.
I’m going to a wedding next weekend and need to find a dress. And let me tell you something, when you’re LOOKING for something, you won’t find it.
Shopping math: Looking for something under a time crunch = you won’t find it. Not looking for anything and you have no money = you suddenly possess the talent of putting together cute outfits, everything fits perfectly and it all looks fantastic.
For one reason or another, all these were no-gos. I’m banking on raiding my sister’s closet anyway. What I did end up buying were two pairs of jeans & a t-shirt from Gap and a purse from Dillard’s. They were having mondo sales and I ended up getting this $88 Jessica Simpson purse for just 19 bucks! WOOP!
Sunday was just a hot mess of work, laundry, working while launder-ing (?), a late lunch at Daily Eats with poppa bear and then some grocery shopping followed by food prepping. I had the “Cali Bowl.” It was incredible! I’m slowly working my way through the menu
I killed two
birds lizards with one stone later while doing laundry.
The next time I need to get a lot of work done, I’m going to the laundry room. I finished all my assignments in about two hours. It was the most productive part of my weekend! And now my Vera backpack smells like dryer sheets. Yay.
Now shall we get to the best part of any Sunday? Food prep and weekly eats.
No, really. There’s just something about fresh produce, isn’t there?
And let’s not forget about roasted produce. Oh, yes. Since I’m going out of town on Thursday night, I didn’t need to stock up as much as I usually do. So here’s some of what I prepped.
Chopped up carrots, celery, peaches, strawberries, lettuce. Steamed spaghetti squash and broccoli. Hardboiled eggs. Roasted zucchini and sweet potato. Washed blueberries. Not pictured: chopped and frozen bananas and meat/fish that I make fresh when I want it. When I make chicken ahead of time, it seems to dry out a bit.
This doesn’t look like a lot — and that’s because it’s not. There are a lot of things I eat during the week that I don’t need to prep. Here are some other things I munch on that I love.
I eat a lot of fruits and veggies — a lot. They’re my favorite food groups. But I can’t survive on that stuff alone. Along with fruits and veggies, I like to bring canned fish to work and mix it with a little salsa and hummus. Sometimes (when I buy it) I’ll bring some pita bread, too. Other snacks I love are anything covered in peanut butter ( ), frozen Chobani yogurt tubes, no sugar added yogurt cups and trail mix (the salty raisins are my weakness!).
Those proteins and fats keep me fuller for longer, and they definitely keep me from making bad snack choices at the office or when I get home. If I’m ravenous, I don’t make great food decisions. These help me control crazy hunger.
